How to make beef tallow the way I do: have the butcher grind the fat trimmings, add a little water, simmer close to an hour, strain. 3.3 lb gave us one jar.

My prime rib recipe from our Christmas Eve party: a 7 lb roast dry brined about 20 hours, cooked at 225°F to 120°F, then 500°F for the crust, with au jus.

Smoked steak the way I do it at home in New York: smoke a prime ribeye off the coals to about 107°F, then sear it fast over hot charcoal and pull it at 116°F.
