So can you get real wok hei cooking outside a van?
We set up a high pressure burner and a wok at a campground in Florida, and I made my own version of char kway teow. I didn’t have bean sprouts, so I used what we had, Argentinian red shrimp, fish balls, flat rice noodles, eggs and chives. I skipped the chilies because Spencer’s eating too.
Wok cooking is super fast, so everything has to be ready before you start. It was a little burnt in spots, but the wok hei was incredible. And the burner and the wok together were less than a hundred bucks.
